Sweet Chevon Curry

A delicious chevon curry given sweetness from pineapple, chutney and sultanas.

Ingredients

500g cubed chevon
1/2 cup pineapple pieces
50g butter
2 medium onions, sliced
1/2 red pepper, cut into small wedges
1/2 green pepper, cut into small wedges
1 dessertspoon cornflour
1 dessertspoon curry powder
1 tablespoon sultanas
1 tablespoon coconut
1 tablespoon chutney
1/2 cup pineapple syrup
1/2 cup stock water
salt and pepper
juice of half a lemon

Method

Melt butter, add onions, peppers and pineapple pieces.
Cook for 2-3 minutes. Remove and set aside.
Brown chevon in butter, add curry, sultanas, cornflour, coconut and chutney.
Gradually add pineapple syrup and stock.
Season to taste.
Return vegetables and pineapples.
Cover pan and cook slowly for one hour or until meat is tender.
Add lemon juice just before serving.
Serve with rice.
